Supa de Mere.
- 4 or 5 apples (sour or Pippin)
- 1 tbsp. sugar
- 1/2 lemon juice
- 1/2 lemon slices
- Cinnamon to taste
- 2 tbsp. flour
- 1 cup sweet cream
- 1 egg yolk
- salt to taste
- Boil apples in about 3 quarts water.
- Add sugar, lemon, cinnamon and salt.
- Beat flour with yolk only (egg white will curdle), stir in the cream and add to soup which is done and barely simmering.
- Set aside a few minutes before serving.
- Serve with croutons, crackers, toasted bread cubes, etc.
