Supa de Mere.


  • 4 or 5 apples (sour or Pippin)
  • 1 tbsp. sugar
  • 1/2 lemon juice
  • 1/2 lemon slices
  • Cinnamon to taste
  • 2 tbsp. flour
  • 1 cup sweet cream
  • 1 egg yolk
  • salt to taste


  1. Boil apples in about 3 quarts water.
  2. Add sugar, lemon, cinnamon and salt.
  3. Beat flour with yolk only (egg white will curdle), stir in the cream and add to soup which is done and barely simmering.
  4. Set aside a few minutes before serving.
  5. Serve with croutons, crackers, toasted bread cubes, etc.
