  1. Roll the bologna slices to form cornucopias.
  2. Anchor each with a toothpick and attach an olive to each end of the toothpick.
  3. Fill each cornucopia with small cubes of potato which have been mixed with the mayo, salt and pepper.
  4. Cut the lettuce noodle fashion and place on a round platter.
  5. Place the cornucopias on the platter with the tips in the center.
