  1. Boil the brain. Let cool off, then cut into finger thick slices and salt.
  2. Make a dough out of flour, milk, beaten egg, salt and club soda.
  3. The dough must have a sour cream thickness.
  4. Dredge the brain slices in this dough and fry in hot lard. Serve with green lettuce.
