Breaded Brains

Description

In Romanian: Creier pane

Ingredients

• 1 beef or 2 veal or pork brains
• 2 eggs
• 2 tablespoons flour
• 4 tablespoons bread crumbs
• salt
• 2 tablespoons butter or lard
• sauté of green peas or carrots or green beans

Directions

1. Boil the brain, let cool off, then cut into finger thick slices, salt, dredge with egg, then flour, egg again and finally bread crumbs.
2. Fry in hot lard or butter.
3. Serve with a sauté of green peas, carrots or green beans.
