  1. Boil the udder with the vegetables and a little salt.
  2. When it is soft, remove, let cool off, then cut into medium thick slices (as for schnitzel).
  3. Salt, pepper, dredge with egg beaten with milk, drain well, dredge with flour, again with egg and finally bread crumbs.
  4. Fry in hot lard like schnitzel. Serve hot with boiled vegetables or lettuce.
