In Romanian: Uger pane
- 1 lb / 500 g udder
- vegetables for soup
- 1 egg
- 1 tablespoon milk
- 1 tablespoon lard
- 2 tablespoons flour
- bread crumbs
- Boil the udder with the vegetables and a little salt.
- When it is soft, remove, let cool off, then cut into medium thick slices (as for schnitzel).
- Salt, pepper, dredge with egg beaten with milk, drain well, dredge with flour, again with egg and finally bread crumbs.
- Fry in hot lard like schnitzel. Serve hot with boiled vegetables or lettuce.
