  1. Fry the hen pieces in lard until yellow.
  2. Add the finely chopped onion and flour.
  3. When the onion starts to turn yellow, add 3 – 4 tablespoons of water, juice from 4 – 5 tomatoes, salt and tarragon.
  4. The quantity of tarragon is to taste.
  5. Cover and simmer.
  6. When the meat is almost done, set into the oven for until desired doneness.
  7. You may prepare this with raw onion.
  8. In this case, add it with the water.
