  1. Clean and wash the leeks cut into medium size portions.
  2. Scald with boiling water.
  3. Drain and lightly fry in oil.
  4. Add salt, pepper, tomato sauce, sugar, vinegar and olives.
  5. Bake until the liquid is reduced.
