  1. Pick the spinach leaves, wash in several changes of water.
  2. Set to boil in previously boiling water.
  3. Boil for just a few minutes until the spinach is wilted.
  4. Drain and leave in the colander until cool.
  5. Chop very fine.
  6. Then put in a pan with the butter, 2 – 3 tablespoons of water, milk and salt and simmer until the liquid is reduced.
  7. Serve this dish with fried or Scrambled Eggs.
