Strictly speaking, mutton is meat from either female (ewe) or castrated male (wether) sheep having more than two permanent incisors in wear. Sheep mutton is meat from a sheep over two years old, and has a less tender flesh than lamb. Older sheep produce a richer flavor, but it can be tough if not cooked properly. The best way to cook any cut of mutton is very long and slow. It is popular in Middle Eastern and British cooking.
