  1. Wash and halve the quails lengthwise.
  2. Cover and let sit for 15 – 20 minutes.
  3. Then fry with the butter.
  4. Then pour the sour cream which was well mixed with the flour, add 1 – 2 tablespoons of water, salt, cover and simmer for 15 – 20 minutes.
  5. Serve with warm polenta.
