  1. Clean, wash and salt the turkey.
  2. Place in the roasting pan with a tablespoon of lard and a few tablespoons of water.
  3. Set in the oven at a low temperature and keep basting with the pan drippings, gradually increasing the heat and roast for about 2 hours.
  4. When the turkey starts to brown reduce the heat and bake until done.
  5. When it is done, remove from the pan, slice, arrange on a platter.
  6. Put two tablespoons of water in the pan and let boil on top of the range.
  7. Stir.
  8. Strain this sauce and pour over the meat.
  9. Serve with French fries, pickled peppers and cucumbers or sautéd cabbage.
