For two persons:

DirectionsEdit

  1. Wash, dry the eggplant, cube it, salt it and let it sit for 20 – 30 minutes.
  2. Then wash it and drain well.
  3. Fry in hot oil until soft.
  4. Pour the beaten eggs on top.
  5. Fry until the eggs are done (do not over-fry).
  6. Serve immediately.
