  1. Rub the entire piece of meat with salt and then, after making some slits in the meat, place garlic cloves and pieces of bacon in them.
  2. Fry the meat on all sides in hot lard, add broth or water, pepper, cover and let boil, at slow temperature until the liquid is gone and the meat is tender.
  3. If necessary, while it boils add some more warm broth or water.
  4. Slice the meat in one inch thick slices, place on a platter and serve with mashed potatoes, vegetable saute, lettuce or pickles.
