  1. Set to boil the washed and pre-soaked peas.
  2. Simmer, covered.
  3. When the peas are done, drain the water and sieve, thinning with a little of the pea boiling liquid.
  4. Add sugar and salt and beat, adding oil drop by drop, until very creamy.
  5. Place on plates and garnish with pickled peppers or red beets.
